Quick Toffee Crunch Recipe

By Sherri Osborn, About.com

Try this quick and simple recipe - my families favorite! Great Christmas cookie idea.

Prep Time: 20 minutes

Cook Time: 12 minutes

Ingredients:

  • 1 Package Cinnamon Graham Crackers
  • 1 Stick Margarine (8 Tablespoons)
  • 1 Stick Butter (8 Tablespoons)
  • 1/2 Cup Sugar

Preparation:

Preheat oven to 350 degrees.

Line a large cookie sheet with foil. Lay one layer of graham crackers on the foil. (All edges should be touching!)

Place the margarine and the butter in a medium sized pot; melt them. Once melted add the sugar and bring it to a boil, stiring constantly. Boil it for EXACTLY 2 minutes.

Remove it from the heat and immediately pour it over the graham crakers. Use a wooden spoon to spread it so all the crackers are covered. Place it in the oven for 10 - 12 minutes.

Remove from over and let them cool completely in the pan. Once cool break them into small pieces.

Optional: When you take the toffee out of the oven, sprinkle the top with chocolate chips! You can even let them sit for a few minutes until melted, and then spread them out to look like frosting.
